I’m drooling as I type this post. White Chocolate & Raspberry Blondies – heaven. It is such a lovely day today I thought I’d share something with a hint of summer to it!
So grab your ingredients as listed above and have a go at making these crunchy on top, chewy in the middle bites of heaven.
To start, preheat the oven to 180oc / 350oF / Gas Mark 4 and grease a cake tin.
Melt HALF the white chocolate in a saucepan then set aside. Beat the butter and sugar together, then whisk in the eggs.
Add in the vanilla extract and pour in the melted white chocolate before giving it another mix. Then sift in the flour and salt and stir in.
Finally chop up the remaining white chocolate and add to your brownie mix along with the raspberries…mmm. Then transfer to your baking tin.
Spread the mix within the tin to get a nice even layer and transfer to the oven for about 30 minutes. Then voila – melt in your mouth blondes!
