This was my Father’s Day creation this year! Eton Mess is my Dads favourite, so it was the perfect simple dessert to make. I also got to use the Paper Straws from my shop! This is also cheats Eton Mess as it uses ready-made mini meringues, but you can of course make your own.

  • 280ml Double Cream
  • 300g Fresh Strawberries
  • 10 Mini Meringues

Directions:

1. Whisk your double cream for approx 7 minutes until thick and firm, it shouldn’t be runny.

2. Chop your strawberries into quarters (leaving some for garnish) and stir into the double cream.

3. Crush your Mini Meringues into large chunks and stir gently into the cream and strawberry mixture.

4. Serve in sundae dishes and garnish with a whole strawberry and paper straw!
